Whether it’s our comfort food that wakes you in the morning, the fusion, lighter lunches that take you to different places, or our five-course fine dining in the evening, all are served from our heart to create an experience you’ll never forget.

Monday

Welcome to the South! And there is no better way to begin your adventure with us than by becoming one of the family. The best way for us to welcome you into the family starts at the dinner table with a little Cajun flare! Tonight we wish to share a part of our history with you that runs deep in our family as it embodies true Southern hospitality and informality…the two best ingredients to get to know someone. So roll up your sleeves and grab plenty-o paper towels as we dive into a crawfish and shrimp boil.

Organized chaos/love on a plate/table! Some of the areas freshest crawfish and shrimp flown-in from St. Louis delicately blended with the finest herbs and spices which all share their flavors with the combined new potatoes and only the sweetest corn from our local farmers…c’est bon!

After Dinner Delicacies

Nothing says welcome better than my grandmother’s warm apple pie topped with some good ‘ole southern homemade vanilla ice cream. No worries if you just can’t seem to find any room for my grandmother’s “love on a plate” ’cause we might just have the next best thing via a hillbilly rendition/tradition. We call it “apple pie in a jar”! Just ask us about it as we would love to share.

Tuesday

All of our mornings start with a warm, hearty breakfast consisting of the areas finest comfort foods.  We simply want your day to start with a smile and end with a smile.

Today, we get started with a cold glass of fresh squeezed orange juice or other juice of your choice.  Or perhaps you are looking for something to warm and wake you up.  We encourage you to try one of our gourmet blend coffees.  We will follow with some local fresh fruit (seasonal) which can be used to top your airy belgian waffle accompanied by a side of hash browns and bacon.  (If you dare, ask for the local favorite of “Hunter ham,” my mother’s famous recipe, to accompany your waffle!)

Lunch
Put on your walking shoes and bring your cameras as we hit the trails with the quads for the Current River National Scenic Riverway in the Mark Twain National Forest.  We’ll bring the coolers as we stop at “The Clubhouse” overlook for lunch, you just bring the smile.

Menu:
Light Refreshments – Water, Tea, Lemonade, Soda, or Wine
Sirloin steak sandwich on homemade focaccia bread with just a hint of arugula and a scrumptious slice of home-grown tomato and feathered with a little roumalade.

Dinner
It’s time to knock off the dirt from the day’s adventure and put on your best as our pianist welcomes you to our formal dining room to partake in the evening festivities.  Please feel free to bring your music requests.

Grilled Quail with a Balsamic reduction served with Parsley New Potatoes and lightly kissed with parmesan cheese

Wednesday

Breakfast
Today we are keeping it all on the farm, but that does not mean it has to look like it!  Food is many ways just like us, doesn’t as much matter as to where the ingredients come from as it does how you combine them that determines your success…

Menu:
Fresh Orange Juice, other juices, Coffee or Water
Eggs Benedict served with Bacon
Oatmeal or Grits upon request
Fruit Medley

Lunch:
It’s time to break-out those riding boots and don your cowboy/girl hat.  We are heading on a trail ride tour of the property.  We will take a break on the back half for some of the best pulled pork BBQ the South has to offer…make you wanna kiss your momma!

Menu:
Water, Tea, Lemonade, Soda
Slow roasted and smoked marinated Pulled Pork Butt Sandwich with Cole Slaw and Potato Salad
Mama’s Banana Pudding

Dinner:
This night you can’t soley blame it on the chef.  Why?  Because he invites you into his kitchen to be a part of the preparation.  Don’t worry, he’ll provide the proper equipment, supplies and instruction; you just have to provide the willingness to learn…and the insurance!

Creamy Lobster Bisque
Pan seared Steak finished off on the grill with a side of Bacon-Wrapped Asparagus in a Vinageratte reduction

Thursday

Now that you have seen the ranch and its surroundings, it is your call as to whether you desire a day of adventure or rather enjoy the tranquility of the ranch.  If you choose adventure, we can schedule with one of the local companies for you to enjoy a few hours afloat on the beautiful Current River National Scenic Riverway.  They will provide all the gear and transportation for the drop-off and pick-up point.  Or if you would rather just work on your golf swing or tour the ranch on your personal quad, we will be there to assist you.

Breakfast:
Today is one of my favorites that I began cooking from a very early age…stuffed french toast.  Nothing better than a lightly dipped slice of texas toast in a batter mixture and gently embodied with a cream filling with a hint of flavor of your choice…orange, strawberry or banana.

Menu:
Fresh Orange Juice, other juices, Coffee or Water
Stuffed French Toast with a side of Ham or Bacon
Oatmeal or Grits upon request
Fruit Medley

Lunch:
We are keeping it light and zesty today to give you that extra little pop!

Menu:
Water, Tea, Lemonade, Soda
Lightly grilled/smoked Chicken Fajita Wrap with fresh Herbs and a side of Homemade French Fries
Lemon Bars

Dinner:
Come early to relax with a glass of wine by the fireplace or in the library and enjoy the classical violinist as she pours out sweet nectar on the ears whilst the chef prepares the sweet nectar for the tummy!

Loaded Potato Soup
Farm Raised Blackened Catfish on a bed of Jasmine Rice with a hint of saffron and drizzled with a Mango, Scallion, Cilantro Chutney
Warm Vanilla Browny enveloped in homemade Pecan Praline Ice Cream

Friday

It is your day to bask in the sun as we hit the road to take a tour of the state’s largest spring and relax on the soft blades of grass as we enjoy our picnic.

Breakfast:
It is the morning of the egg.  You tell us how you prefer it and we will cook it that way.  Whether it is as an omelet, sunny-side up, or shirred, we will prepare it that way and make it the best ever.  Why, because you deserve it!

Menu:
Fresh Orange Juice, other juices, Coffee, Water or let’s splurge a little, why not, Mimosa!
Eggs…however you want ’em with a side of Bacon or Ham and Hash Browns
Fruit Medley

Lunch:
We will bring the picnic baskets of food and wine, you just bring your taste buds and desire to relax.

Menu:
Water, Tea, Lemonade, Soda, or Wine
Chicken Salad Finger Sandwiches and Homemade Chips
Cheese Cake nestled with Blackberry, Strawberry, or Blueberry topping

Dinner:
Chef’s favorite…seared venison finished on the grill.  Tonight’s entertainment includes the vocal soloist as she embellishes our ears with sweet itallian opera.
